New For Catering in September

September 15, 2016

catering all dishes We've got lots of new items on the catering menu this September. We really focused on expanding our family-style options to give our clients more flexibility when scheduling multiple orders and more variety for the lucky people eating. Check out our latest offerings, available now: Herb de Provence Roast Chicken, Roast Sockeye Salmon and Flank Steak.

We wanted to give you a glimpse into how we're preparing the items, just in case you're interested but need a little more encouragement.

Herb de Provence Roast Chicken

herb-roasted-chicken beauty 3x2

A simple marinade of olive oil and Herbes de Provence make this naturally-raised, Ontario roast chicken shine. We like to pair this with our housemade BBQ or Piri Piri sauces to add a little kick of extra flavour, or heat.

Herb de Provence is a mixture of dried herbs typically found in the Provence region of southeastern France. Ours contains savory, marjoram, thyme, rosemary and lavender.

Roast Salmon

Miso-salmon ingredient 1x1

We use a wild B.C. Sockeye Salmon. It's harvested by the hook-and-line method which avoids non-targeted by catch and is a certified sustainable choice by Ocean Wise. So you can feel good that this salmon got to live a pretty awesome life cruising around the waters of B.C. with all his buddies. Doing whatever wild salmon get up to.

It is characterized by intensely red flesh, full-flavour, high protein content and omega-3 fatty acids. So it's good for you.

We fillet whole fish, season the flesh simply with salt and pepper then roast gently to just medium - the ideal temperature to showcase the qualities of the fish.

Flank Steak

This item is a crowd pleaser. We use pasture-raised beef. Now if you're unfamiliar with the difference between pasture and grain fed, here's the deal: Pasture-fed beef gets to roam around eating grass and generally living a very happy life. Grain-fed cows hang out in the same place and don't get to wander around the ranges. Imagine if you didn't get to wander around at work from time to time - now that would be tragic.

We lightly marinade our steak and pair it with our housemade chimichurri sauce, so everyone can decide how much extra flavour they want to add to top this already delicious beef.
